No cooking required for this keto cauliflower rice salad recipe.  It reminds me of homemade coleslaw but without the mayonnaise. It’s super tasty and raw veg is so packed with nutrients.

A real taste of summer and great as a base for a salad or as a side dish.  A perfect healthy choice packed with goodness.  For those on a keto diet, this is also a great and easy meal.

Cauliflower rice recipe:


Spring onions (scallions)

Optional lime juice.


In a food processor add cauliflower and spring onions and process until it looks similar to rice. If you don’t have a food processor then simply grating the cauliflower and finely chopping the spring onion it will be fine, it will just take you a little longer but will still be worth it.

Add a little lime juice to taste or leave it out and it tastes just great!

I’ll leave the measurements to you.  I usually process around half a cauliflower with one large spring onion or two small ones.  It really depends on how much you want to make.

It’s so easy to make and keeps well in the fridge for 3 days but I would suggest a sealed box as it can make your fridge smell of cauliflower.

Serving Suggestion:

My favourite way to serve this is with homemade hummus, carrot ribbons, a drizzle of extra virgin olive oil and a sprinkle of seeds.

This keeps fresh for a few days in a sealed container in the fridge. I love to make a batch of it, that way it makes lunchtimes so much easier. You could always add it to a medium heat in a skillet and eat it warm as a side accompaniment to a main meal. Either way, this is certainly a versatile and healthy way to eat cauliflower!
