Spring onions (scallions)
Optional lime juice.
In a food processor add cauliflower and spring onions and process until it looks similar to rice.
Add a little lime juice to taste or leave it out and it tastes just great!
I’ll leave the measurements to you. I usually process around half a cauliflower with one large spring onion or two small ones. It really depends how much you want to make.
It’s so easy to make and keeps well in the fridge for 3 days but I would suggest a sealed box as it can smell of cauliflower.
My favourite way to serve this is with homemade hummus, carrot ribbons, a drizzle of extra virgin olive oil and a sprinkle of seeds.
