Are you ever stuck as to what to do with left over roast chicken? Here’s a great left over chicken taco recipe which you can make as spicy as you like.
Left over roast chicken/cooked chicken (or cook chicken especially for this recipe see notes at the bottom of the recipe)
1 red chopped pepper
1 green chopped pepper
1 chopped onion
1 cup sweetcorn (frozen or tinned)
1-2 teaspoons cajun spice
drizzle of olive oil
Heat the a drizzle of oil in a frying pan over a medium heat.
Add the peppers and onions and cook for approx 5 mins stirring occasionally.
Add the cooked chicken and sweetcorn and heat through for 3-5 mins.
Add the spices and stir (being careful not to break up the chicken too much) for a minute or two.
Serve in taco shells. (Please refer to the taco instructions as they may require a quick heat up in the oven before serving).
You can alter the recipe by using raw chicken, just cook it first and when it’s nearly cooked add the veg and spices.
I always used to buy taco kits from supermarkets and used them as complete kits but this is a great money saving alternative as most supermarkets stock boxes of taco’s for sale on their own.
I like to be creative with my left over roast dinners and as a family we love this recipe (which was inspired from the contents of my fridge). The intention was when I first made this to top it with grated cheese but it was super tasty without.
