Another simple recipe.
A clean tasting dessert. Made with fresh limes and a ginger biscuit base, served with or without cream. This is also a really good dessert after a curry as it really does help to cleanse the pallet.
200g Crushed ginger biscuits
50g Melted butter
500g Mascarpone cheese
40g Icing sugar
Finely grated zest and juice of 2 limes
Mix the crushed biscuits and melted butter and press into the base of a 7″ spring sided loose bottomed cake tin (personally mine isn’t spring sided, just loose bottomed & I manage just fine!)
Using a wooden spoon and mixing bowl blend the mascarpone, seived icing sugar and lime zest and juice. (a friend once tried it in a blender & struggled, it’s really easy to combine by hand with a spoon and a bowl…nice and simple!)
Spread the mascarpone mixture onto the biscuit topping and chill in the fridge for 30mins.
Somehow it tastes a little tart if you lick the bowl and spoon like me, trust me, it tastes much nicer once the flavours have settled having chilled in the fridge for a little while!
