These were so tasty that they didn’t last very long in our house!!  Try them out for yourself, yummy chocolate melting moments recipe with printable so you can make them time and again!

110g Butter or baking margarine
90g Caster sugar
1 teaspoon vanilla extract
120g Self raising flour
30g Cocoa powder

Optional desiccated coconut, or oats or cornflakes for rolling the biscuit balls in.

For the filling (optional):

100g Butter or baking margarine
140g Icing sugar
2 Tablespoons Custard powder
1 Tablespoon Milk

Preheat the oven to gas 4, 180°C, fan 160°C.  Line a baking tray with parchment or greaseproof paper.

Cream the butter, sugar and vanilla extract together in a bowl.

Sift in the flour and cocoa powder and stir well until it forms a dough.

Roll in your hands a walnut size ball of mixture (you should get 24).

In a small bowl, add your coating if using one, alternatively skip this part.  I used desiccated coconut.  Simply roll/coat the ball with the coating then place onto a lined baking tray (parchment paper).

Ensuring the dough balls are evenly spaced on your lined tray, gently use your fingers or the back of a fork to flatten down slightly.

Bake for 10-12 minutes until they are cooked and just starting to crips on the edges.

Remove from the oven and leave to cool on the tray before transferring to a wire cooling rack.

Filling Method:

Cream the butter in a bowl.  Mix in your icing sugar, custard powder and milk.

If you find that your butter icing is runny, allow to cool in the fridge before filling your biscuits.

Fill two biscuits with the icing and enjoy!

Depending on your climate, these would be best stored in the fridge.

Sunny Buttercups Blog

One of the reasons I love this blog is that I’m forever losing recipes.  I should organise them into a folder which would make them so much easier to find but for now, at least I know that I can find my favourite recipe on my blog.

Also, I hate searching recipe’s online and having to scroll through pages of writing until I find the actual recipe and then it also irritates me when a recipe is printable but it’s so hard to find the actual printable to print.

That’s why I write my recipes in an easy to use and easy to print way.  Because I’m sure that I’m not the only person that hates to waste time reading through paragraphs and paragraphs to find the information that I need!!
